The ‘Manzanilla’ and ‘Queen’ olives are still picked ‘ordeño’ (by hand) from the very same olive groves Don Santiago harvested, and collected in a padded, esparto basket called a ‘macaco’. • The olive tree is a cherished symbol of Mediterranean culture; not only for providing a fruit, staple to the Mediterranean diet, but also for its symbolic meaning.
• It is said when Adam died, three seeds were placed in his mouth: a cedar seed, a cypress seed and an olive tree seed. The olive tree which stemmed from that seed stands for immortality, nourishment, medicine, ointment and the fuel of God’s humanity.
• Since the Neolithic age the olive tree has been used to create numerable things. The leaves were used for brewing tea and medicine; to crown Olympic winners in ancient Greece, and the bark for valuable statues and carvings. So, now you know! Whilst we’re not entirely sure that eating olives will make you immortal, it will bring a smile to your face and transport you to Spain with its unmistakable taste of the Mediterranean.
